Salmon left out all night?

I forgot about my defrosting salmon and left it out for around 8 hours yesterday. I am a little wary about cooking and eating it, however I know that cooking it above 160 would kill food-born pathogens so I do not understand why I should throw this food out if cooking it would kill those pathogens. It does not smell bad. Why can't I just cook it thoroughly and eat it?
